Childhood favorite!


This is the last of the open rounds, might as well use the nostalgia in your advantage to make it to the elimination rounds! Make a dish that is linked with good childhood memories. There are no restrictions or requirements, as long as it seems like a pleasant thing. While you're perfectly welcome to make a large spread of food, please make sure there is clearly a "main dish" because that is what people will be voting on.

>Backstory: My mom really sucked at cooking, so bad, in middle/high school, I started just eating popcorn for supper instead of her cooking. As a kid, the only thing she cooked that I really enjoyed was blue box mac'n'cheese and fried chicken nuggets with an ungodly amount of ketchup. I ate this at least once every week. I always got mad when the ketchup got mixed up in my mac'n'cheese, so I added the sun dried tomatoes (actually oven dried) kind of in spite of my younger self

My childhood involved a good deal of running around. From home, to my grandparents, to school, back to my grandparents, and back home. It didn't leave a lot of time for family meals due to time constraints, but it did leave some time for some deliciously lazy meals like corndogs and mac! So that's what I'm presenting, with the twist of encompassing more adult and risque flavors into the meal.

My dish was a Bacon Wrapped Pork Tenderloin Corndog Bites with a Radish-Honey Mustard and Raspberry Ketchup condiment, and a side of Crab Mac 'n Cheese made with a nine month aged Cheddar and Smoked Gruyere.

My entry is chicken paprikash, a Hungarian dish similar to chicken and dumplings but better. I was going to do a pot roast or something that my mom would make but my father wasnt around much and when i would spend time with him he'd make one of 2 thing, chicken paprikash or leg of lamb, i am not rich so chicken it was. My dad died around 3 years ago and this is kind of a tribute to him i guess. Not looking for pity votes and if you dont believe the story tough shit, when i tasted this it reminded me of being at an old farm house in butt fuck nowhere missourri where i first had it.

had a few friends over, got hammered and made this
no family recipe yet i just looked at like 10 recipes and made my own recipe kinda

chicken paprikash with 2 kinds of paprika, homegrown habenaro for an extra kick, dumplings from scratch with a salad mad from some kind of nice lettuce my friend grows hydroponically and a balsamic vinaigrette i whipped up, i would never touch salad as a kid so i thought it was fitting

not a lot of ways to plate it but it was delicious both my friends loved it, alright fuck my shit up

That's not how it is lady pistol. In Thomas's situation, he was planning on making chicken and veg for dinner that night. So he literally thought, 'I know, i'll make up a story about how my grams used to make this for me and let me eat all the crispy skin, those suckers will lap it up'. Come on Bubble, at least give the full description of what I prepared. The second sentence literally states that nothing I prepared is as basic as it sounds in the little bit you quoted.

Here's the rest of my description, plus vertical,

"However, nothing is exactly what it seems… except for the apple, which is just an apple.

The “peanut butter” is homemade cashew butter, with tahini and coarse sea salt. The jelly is homemade blackberry jam, seasoned with a sort of Middle Eastern spice blend (call it a makeshift Baharat). The bread is a locally made boule, buttered and fried, with the crust cut off.

The “bumps on a log” are whisky macerated raisins on baby spinach leaves. The potato chips are freshly made kettle chips tossed in shichimi and topped with freshly cracked sansho pepper.

It’s sort of a conceptual piece. You are the apple bunny rabbit in the center (it was supposed to have carrot stick legs, so go Hook and use your imagination), and you can go in three different directions.

Behind it is bunny poop on lily pads, which she can wrap up and eat in single bites.

The trail on her left leads to the chips. If you’ve never had decent sansho pepper, it’s sort of like putting a 9 volt battery to your tongue, and always reminded me of going to the children’s science museum growing up, which was the idea behind using it.

The trail on the right leads to the grilled cashew butter and blackberry jam sandwich, with some seemingly out of place flavors added. It’s served on a bed of fresh arugula, which is there to catch any of the hot fillings that might ooze out, and add a peppery bite.

The idea is to have fun with it, while still enjoying grown up flavors."

My submission for this round. You might think it just looks like a roast chicken dinner, but you couldn’t be more wrong.
My grandmother would always make this meal for me. She called it ‘magic chicken’, and every time she made it for me she told me about how it would help me get through anything in life; how it would help me become strong. I didn’t discover the significance until later. . .
During the Holocaust my grandmother had seen her father beaten and hung in the town square in a small village in Poland. She and her mother were able to escape by hiding in the wine cellar of a wealthy landowner. He provided them with food and a small oven in exchange for sexual favours from my grandma and her mother (my great grandmother). My grandma would tell me about how whenever they made the roast chicken her mom would tell her that she was going to be alright; that she was going to grow big and strong and escape that place. Eventually exactly that happened.
I remember when I was 12 my grandmother came to live with us. She was very old and she was dying. I didn’t want her to go. So one day, for the first time, I decided to make her ‘Magic Chicken’ to help her get better. I made it all by myself. She ate the whole plate, and looked at me with a tear in her eye.
“This will make me strong for heaven” she said with a sweet smile. That night she passed.
I haven’t made that dish again until now. I hope you enjoy it.

My only (very minor) criticism would be the choice of doing bacon wrapped pork tenderloin corndog style. Part of the appeal and simplicity of a corndog is the texture of the batter and the soft hotdog, and it seems like the bacon/pork would have too much of a bite to them.

Again, it looks great, just giving my two cents/first impressions.

I appreciate that, and you're not entirely wrong. My original concept was to go a little more high end with a chateaubriand over the pork tenderloin because it would have been more tender. In fact, along that original concept I was planning to do mini-wellingtons "corndogs" instead of a more traditional corndog. I just got back from a weekend in LA though and the reserves are tapped until payday. It would have been really a fun night if I could have gotten some fillet steak, but we all make do with what we have.

Lunchable consists of Turkey and cheddar with Ritz and Capri sun, also a reeses peanut butter cup.

Turkey torchón with Ritz toasted in butter and herbs, Pacific cooler Capri sun gellee, and refreshing cherry jello cubes with chocolate and cheese tasting assortment.

Turkey slices were wrapped in a bacon slice before cooking, Capri sun was simmered with some pectin and pomegranate vodka, Ritz was processed then pan toasted with butter thyme and basil, cherry jello -made jiggler style- because it went with the Capri sun flavor, Orange slices because we always got one with lunch.

For this challenge I interpreted things a little differently. I went with foods that are geared towards kids and reminiscent of my time in the trade school cafeteria. I rarely open my lunch bag to find Lunchables but on the occasions that I did it I was the coolest kid in lunch period. I was raised by my grandparents and they always included a citrus of some kind.

I wish I would have had more time for this challenge but a lot happened this week and by the time I got home today the day light had gone but I wouldn't have time to do this tomorrow. So I apologise for shitty lighting. I live in a cave.

Timestamp and Identifier incoming. Here's my Nacho Pizza. I made the dough with honey. It has a nacho cheese sauce base, home seasoned ground beef, mexican 4 cheese blend, topped with homemade guacamole, homemade tortilla chips, and a little bit more mexi cheese. Pizza was always a favorite of mine growing up. Friday was almost always pizza night, and I also enjoyed having pizza for lunch many times during the summer. I decided to make a pizza themed around some of my favorite childhood memories, which were my family vacations to Canada. Every summer my family would drive from southern California to Canada in a VW van and camp the entire time. I made a nacho pizza because we would always hit up a mexican food joint with really good nachos in San Luis Obispo California. I also remember having really good pizza at this hippy bakery on Hornby Island in Canada. We would eat it outside and listen to live music. I used Tillamook cheese to represent passing through Oregon. My original plan was to also make a marionberry and apple pie with the marionberries representing Oregon again and I was going to use Washington apples. I ended up not having the time or energy to make the pie unfortunately.

My only advice on plating would be to take your sharpest carving knife and clean up the edges so that it doesn't look like a slice of casserole with fancy plating. Here's my entry: Cherry tomato bolognese with white truffle oil alphabetty spaghetti

I was a really fussy eater as a kid and spaghetti bolognese at 8 years old was the pivotal dish that took me out of that spell an into real food. It became my favourite meal as a kid. Granted, the ones that my mum used to do were based on a jar of Dolmio but everything here is from scratch.

In case that story doesn't sell it, I decided to use Alphabetty Spaghetti to make the challenge more relevant to childhood. It's really fun to cook with!

Bolognese. Bacon frying in pan with rosemary. Add white onions and chopped garlic after a few mins. Add red wine to deglaze. Add mince till it browns. Add shitloads of chopped cherry tomatoes, two punnets (ordinary is good too but I love cherry!). Mix. Add a few pinches of salt, pepper, oregano, chilli powder to taste. Season your food how you like. Leave to sit and stew for a few hours ideally.

Alphabetty Spaghetti. Takes 4-6 mins to cook, 3 mins is al dente. While this is cooking, chop basil, chilli and garlic. Once ready, drain and add pasta to an oiled pan. I hold my hands up here and say that I fell for the truffle oil meme because of last minute competition panic as I have been completely busy since Wednesday afternoon. It tastes OK but it's very overwhelming. Use sparingly or otherwise replace with extra virgin olive oil. The pasta is prone to clumping together very fast so mix thoroughly in the hot pan. Plate and serve with bolognese.

Optional: Spell out your challenge in dried pasta. They really do make lots of every letter.

It's "Extra Virgin Olive Oil flavoured with white truffle". The brand is La Espanola. I found it in a big Sainsbury's.

It tastes fine but it's powerful stuff that dominates other flavours. A quick google search indicated that it's not looked upon favourably by many chefs. Still, too late now. I'll probably use it as a dip with bread or otherwise use very sparingly in dishes in future.

To be honest, the bolognese looks pretty bad. The onions and carrots are cut quite large which suggests to me that the texture would be poor and that they probably weren't well sweated as it would be more difficult. The meat doesn't actually look as though it was properly browned, more that it simply turned brown instead of frying. The meat also hasn't broken down in the sauce.

The use of alphabet spaghetti and the adult spin on a kid's food boosted this for me since it's otherwise quite a basic dish. Unusual highlight of ingredients and ways of preparing them. You could have taken longer on bolognese as it seems rushed.

Protip: source a couple grams of truffle and add some nice olive oil to it. Let it sit a week.
If you buy a bottle of truffle oil that has a knob of truffle in it, refill it with oil after it is depleted. That knob is enough to flavor many batches of oil.
Use SPARINGLY as a garnish on risotto or pasta with simple sauces, NOT as a base for salad dressing. Maybe a couple drops in a dressing.

Kinda shit to be out already but that was probably going to happen anyway after missing the second round. Maybe next year.

Here's the food anyway, just in case anyone feels like rating unofficially. Red braised pork, something I always had a lot of as a kid. Cooked in strips and chopped at the end, giving the pretty, clean white on the inside. Threw in some rock sugar near the end which gave it a really nice glaze. Broccoli was blanched then shallow fried and drizzled in the unreduced sauce. Served with some rice. All in all turned out really nicely, everyone was in agreement this was the nicest they remember me making it., which makes it all the more frustrating I didn't do it justice by actually uploading it in time.

Not sure if the entry or this vote is valid but here goes anyway. Looks like a pretty decent meal but a bit sparse on the broccoli and rice. I would have preferred medium grain rice personally, more sauce, richer glaze, broccoli boiled a little less and fried a little more. Very typical of what I would have eaten as a kid.
