A lot of these small spaces wouldn't be so bad if designers put any thought into them or builders put any effort into them. More shelving and cabinets for storage goes a long way, even if it requires a foot stool to reach.
Unfortunately cheap often means lack of thought or care, so they slap up some standard prefab cabinets or use some generic CAD standard file just to say they tried and call it a day.

This means your meats and baked goods cook better. The temperature stays more true to your selected setting, making many more small adjustments than the on/off type thermostat. Think of your flame going from 365* - 335*F maybe for an on/off (newer) type and 355-345* for the trusty old modulating oven thermostats. There is a difference in quality in the resulting baked goods and meats.

Also, with your new wolf, viking, etc ovens, your hsi (electronic burner ignition in oven) will fail in a few years, and you will have to replace the whole ignition unit. When thermocouples fail (component in old style modulating flame ovens) fail it is like 20$ part, looking close to 100$ for the HSI in viking/wolf etc. T-couples last longer too...

AND more...

The adjustable air settings on the top burners means you can better adjust your flames. Sharper flame characteristics is how you keep cooking on a consistent even flame. When they go out of ideal position you can open the top, adjust, and you're back in business like when it was first made. That means your burners will stay hotter, and can adjusted back to optimal.

With any wolf/viking/etc the burners are fixed air mixtures that are preset in factory. In 5-7 years your flame characteristics will decay because of ware and tare. No way to correct it.
