Fire only kills the bacteria while it's hot. When it's cooled down, they can and will come back to it. This is why you don't leave raw chicken and cooked chicken together.

Also fire doesn't clean away the contaminants. So toxins left by bacteria could also still be there. Also what are you going to do if there was a piece of an animal corpse rotting in there? Setting it on fire won't make it okay to use the grill on the spot.

Crock pots are, I think, an excellent shortcut/lazy way to do more soupy things like chili, stews, italian beef and other things of that caliber.
But for other dishes, there's no substitute for a good sear.
