butter for frying

cumin powder
crushed hungarian wax pepper
garlic powder

Those look like some bangin medallions with a nice even fry. I haven't tried fondant potatoes, but you basically crisp a face of potatoand flip it, put a bit of broth in the pan partially submerging them and then baking / roasting.

I am interested in the dehydrated stiffness of browned potato locked in and then the baking broth steam and hot liquid kick the rest of the potato into a high heat high moisture breakdown.
