I have done an awful lot of experimenting with this and my conclusion is that seasoning the flour is a bad idea. Very little of the flavor added to breading actually remains in the food, whereas it does a great job flavoring your cooking oil. That's counterproductive to me because I want the cooking oil to be re-useable for many dishes.

Whenever I make fried dishes that might have seasoning in the breading I either marinade the meat in advance, or I season the food after frying. Not only does that preserve the cooking oil better, but it's also a lot tastier.

Also, there is one Asian fried chicken dish that I make which is marinaded in a lot of crushed raw garlic. I leave the raw garlic in place when I fry that dish. You get lovely bits of crunchy garlic along with the chicken.

We do. Dried herbs are not as tasty as fresh ones because many of the volatiles have evaporated off (that applies to garlic and onion powder as well). Dried mushrooms can be fantastic--for many types the drying process actually improves them. I will happily take dried shitakes over fresh any day. And in the case of seafood, I assume you're referring to things that are dried and cured? Those get extra flavor from the curing process.

But in the case of garlic and onion, I honestly cannot think of any dish where having those dried actually improves the dish. With dry you're stuck on a loss of flavor (volatiles which have evaporated off), and they're also fixed. Compare that to fresh where you can control the taste to best suit your dish. With garlic, for example: you can leave it raw for that acidic bite. Or you can cook it to totally change the flavor. If you roast it then you end up with yet another different flavor to work with. You can fry it and get an interesting texture, etc. None of that flexibility exists with garlic powder.

I just wish people would be honest and say they use the powder for convenience.
