Mexican roasted sweet corn on the cob. It usually starts with not steamed corn, but roasted over coals in the husk, so right before this clip if done right you'd see them pull back the husks.

Now there is a common theme to street food and fruit in mexico, lime juice and chili-salt. They sprinkle it on cucumber spears, mango, pineapple, melon, etc. There is ways to have butter without refrigeration, and not use up limes too, you use mexican mayo instead, as mexican mayo is made with lime juice, not vinegar. So you get creamy and tangy in one. Now they also can make lime-chili salt, such as tajin brand.

1) mayo
2) cotija, a mexican fresher tasting parmesan, or queso fresco, a kind of a cross between feta and mozz
3) chili powder, chili powder, Tajin lime-chili-salt

That is the main recipe. The chips and such are like for extra elotes on the side, corn and then all that crap again. It is stupid. They are melting that mayo under there with hot drippy corn on top of chips? It's just some vendor's idea of value.

The corn on the cob this guy made is supposed to be a generous caloric value thing to drum up business. Ideally nothing on it would be that thick. Would any human want a face full of mayo and cheese crumbles? Hell no. A decent place would also serve it off the cob with a fork in a small cup. Layering the toppings on top.

This is my local area's version of a chicken BBQ and many many many similar knockoff versions can be found every summer at fairs, fire halls, fund raisers, road side stands, benefits, etc. Its just a simple marinade with oil, vinegar and eggs with basic seasonings, charcoal grilled and served with various sides like mac/potato salad, marinated tomatoes, baked beans or slaw. and always a potato roll.
