Tacos are great, you heat up the tortillas (Grilled corn totillas are my fave) and make your own toppings just make sure not to get too distracted by her when you're chopping the veggies, don't want to lose your finger.

In keeping with the southwestern flavor, Tamales are what I like to call a "Team building" food, because you'll be filling the dough, wrapping the tamales, and it's great for "assembly line" style putting together.

Other good ideas are a classic roasted chicken.
