Do you really need to cook peas and lentils ?

Or do you just need to warm them ? I know we cook vegetables for a better digestion but they loose their nutritional value like that.

I'm asking because I want to eat healthy and decided to have a side dish of peas or lentils at every diner. But cooking them is so tiresome.

Peas are easy to steam. Lentils can be a little time consuming to cook, but not very difficult.

Peas (as in the usual usage of the word, and not cannellini, kidney, or other legumes) and Lentils are fairly safe, provided they don't cause you to suffer any sort of allergic hemolytic anemia.

Lentils require cooking. 20-40 mins depending - longer, plus a soak if they're dried. Raw, I'd imagine they would be quite tough and bitter. Cooking actually increases bioavailability of various nutrients from Lentils.

Frozen and canned peas "should" be brought up to a food-safe temperature, and dried peas should be soaked and boiled to make them edible again, but fresh peas are great just the way they are.

A lot of beans contain PHA - a lectin protein (or pair of lectins) that basically turn your blood cells into gelatin. Kidney beans and Fava beans especially require cooking for several minutes to break these proteins down.

Ok, so what about that :

Every Sunday I cook a whole can of (already soaked) lentils for 20 minutes. I put the plate in the fridge (after waiting for it to cool down) and during the week I just heat a bowl from the fridge with boiled water.

Does that sound safe (and efficient) ?

Buy dried lentils, they're dirt cheap and the bags (I forget the size but they weren't huge) would last me many weeks of dinner every night when I was poor as a nigger. Used to only eat porridge with a banana and peanut butter for breakfast then some lentils for an evening meal. I also worked 6 days of the week at two different restaurants dish washing and cooking so I supplemented my food intake there. It was comfy in it's own way. At first lentils were so fucking bland I could hardly eat them but after a while I began to love them. Next time I get grocers I think I'm going to buy some dried red lentils for old time's sake

You are right if it takes this long to cook them I had better buy dry lentils and soak them myself before. I always have a side dish of vegetables and a broth.

if you could somehow choke down a whole bag of dried lentils, you might get dehydrated, and you might develop a mild case of scurvy, while also probably becoming fairly constipated... It's definitely recommended to soak off/cook down the trypsin inhibitors and phytates.

If you ate a handful of dried lentils, and had an otherwise healthy diet, you'd probably just need a glass of water at some point.

it takes like 30 minutes to boil them and like 20 if you soak. it's a back of the stove thing you could easily do in large batches
