I can only rarely get eel at a decent price. When I do I fry them with the bones in. Like pic related.

OP here. To review so far, kill the eels. Slice a ring around their necks behind the gills. Use a paper towel to grasp still attached head, and use pliers to pull the skin off the entire eel all at once. Next, fillet each eel. It's not necessary to remove every bone, just the backbone.

Next step is to cook the eel. I baked the fillets for 20 min at 375F, then moved the fillets to a steamer for 5-10 minutes. Finally, bake again at 375 for another 20 min. Baste with sauce during the second bake.

Now you can store the eel in the fridge for a few days. When ready, cut the fillets to sashimi size and top rice rolls with them. Toast them in a toaster over for a couple of minutes first, or just serve cold. Tie them to the rice balls using a small strip of nori, then garnish with eel sauce.

I'm doing a big Sunday Night Dinner tonight, so I'll have more pictures of the eel (and other courses) later tonight. If this thread is still alive that is.
