Why is it so hard to find consistently good coffee?
It doesn't even matter how much you spend, nobody gives 2 shits about consistency.
That specific blend from some no-name roaster you liked last time will taste completely different (read: BURNT) the next time you order, and it's the same deal with supermarket coffee.

The chances of finding good coffee is the same regardless of the price.

That's the thing about coffee. It's a fickle crop, and even the expensive shit has some variation from season to season. This is why big roasters buy huge lots of beans and blend several regions together (with a trend for roasting darker to eliminate some flavor variation at the expense of an occasional exceptional batch). The mid-high price tier coffees you find at grocery stores are going to have a variation from mediocre to pretty good. Small local roasters are slightly more expensive, but will give you mediocre to very good coffee. The higher end of coffee regular people can buy from specialty roasters/importers online or subscriptions to specific coffee estates (and this is the $30+/lb tier) are gonna give you good to exceptional quality. That's as far as I've ever gotten because I'm a regular person. I think you need a shit ton of money and some industry connections to be able to get the best coffee.

People do care, but there's only so much you can do as an importer, buyer, or roaster depending on the crops being grown in any given year.

I've had good experiences with Mistobox subscriptions. When I order the same kind it tastes the same. Places around my job also do a good job. Where do you live OP?

Supermarket coffee is usually on the shelves for weeks after roasting, so that may be it.
