Here's my take on cookware:

Good for searing, browning, boiling, steaming, and stir-frying (in a wok)
>cast iron
essential for things like making tortillas, good substitute for a flat griddle at home, bacon (although it's a shit seasoner because of salt in fat), scrambling eggs, slow-cooked stews, sauteing almost anything. You're right about cast iron being good for most things, but it's a nightmare to sear and deglaze things. Also, it'll never be a substitute for a stainless steel wok. It's true that there's little substitute for cast iron if you want to cook over traditional wood coals, or do a dutch oven bake while in the woods.

Basically just good to make your over-medium eggs or omelletes with, and not much else. But it's my go to if I want pure, fluffy white, lace-free eggs over easy.
