It's not a common meat in most areas, but it does get consumed. Americans have a weird relationship with some meats. People might not eat it, but they can't give you a good reason (apart from being hard to find at a grocery).
I've read that Rabbit fell out of favor after WWII. With the economic boom, fancy new mass produced and ready foods, rabbit was seen as a throwback to harder days, poverty days. On the same level as eating squirrel. Seems like the stigma passed down through generations, in one way or another.

True story; When I was a little kid, I got a baby rabbit for Easter every year and just before the next Easter, he’d “go back to live on the farm” and a week later, Dad would be BBQ-ing rabbit…

I figured out what was going on in the 4th grade and that last rabbit (Truszka, short for pietruszka or parsley in Polish) stayed with us for several years and got huge as fuck, until one night he got in a fight with a raccoon who slashed his nose and he got an infection and we had to take him to the vet to put him down.

But as he grew up with our dog, he acted like a dog and would come charging across the backyard and “bark” (a kinda grunt) at any strangers and if you teased him, he’d attack you, clawing your pants leg.

Try a recipe for cacciatore, it can be done with various meats and is actually delicious with rabbit.

Back home we would usually oven roast it. My favourite recipe was crushing garlic and rubbing it over the rabbit (especially inside), then putting it in a greased casserole with a layer of sliced onions and wild mushrooms, using just salt and pepper as seasoning. Usually we served it with rice.

Another way is roasting it with diced bacon and root vegetables (carrots, onions and celery root, but celery stalks would do OK as well), seasoned with salt, pepper, allspice and bay leaves. Mashed potatoes are good sidedish, or you can just add diced (or whole small) potatoes to the casserole and roast it together.

Mom would also roast it with a marinade of dark beer and mustard, but I don't know the exact recipe.

Rabbit can be tricky to roast, though, as it can dry out easily. Larding it or putting strips of bacon over it help prevent it, as well as frequent basting or keeping a lid on the casserole for about a half of the cooking time.

From hind legs of rabbit you can cut a piece of meat big enough for breading and frying, various parts of rabbit can be cut into thin strips and used for stir-fries, you can also mince it half and half with pork (rabbit is a lean meat, so you need some fatter meat to go with it in a mince) and use it for meatballs, patties and stuff like that.

We used to keep rabbits at home, had like 8 of them for breeding and they would get litters few times a year, so we would have rabbit once a week or so.

Home-bred (or farm-raised) rabbits are not gamey at all, the meat is lean, white and has very low cholesterol (lowest from all domestic animals, at least on Northern hemisphere).

Southerner here. We eat rabbit, but it's not something available in stores. We basically hunt it during rabbit season. If you have friends that hunt sometimes they'll share.

A lot of people don't like rabbit or deer because of the slightly gamey taste. It can be gotten rid of though, if you know how.

The only grocery store I know of that sells rabbit charges $12/lb and it's imported from China. I suppose I could try a specialty butcher's shop but I haven't seen one in years and they're likely even more expensive. That one grocery store is an "ethnic" place that has the cheapest prices anywhere in the area, including compared to Wal-Mart; it's where I do 90% of my shopping.

It's just not commonly available and it's ridonkulously overpriced where you can find it.

This is part of it. The cattle ranchers wanted "open range", the sheep ranchers needed to fence in their flocks. There was a lot of fence cutting.

In many parts of the western U.S. they still let the cattle roam everywhere freely. It's a fucking hazard. One night I nearly totaled my car against 2000lbs of cow that was standing in the middle of the road right around the bend of a blind curve on a 50mph state highway.
