I don't mind tipping at a higher-end place. When the server will explain the different wine and beers, go into detail on the cheese plate or dessert tray, recommended doneness for different cuts etc. Plus the service is always just plain wonderful, never sitting there waiting to get attention.

I don't understand why anyone would *want* to get paid based on some obsessive minute to minute performance judging process. At this point in my life I've come to realize the fact that it's typically the shitty wait staff demanding or begging for more tips. Being the bartender/waiter is the worst. Having to bust your ass to accommodate people sitting at the bar as well as the tables. We will often tell customers when we are extremely busy that are sitting at the tables we will get their first round if drinks, but if you need refills to come to the bar. We are a bar first, not a restaraunt. Have to run out to all these tables taking food orders, running the food promptly, vlearing tables, pouring drinks, etc. If you are standing still doing nothing for more than 10 seconds you consider yourself lucky.

In an environment like this, we do expect some kind of tip. We bust our ass to provide great service and food, as well as promot pouring of drinks. Its not the kind of place with dedicated chefs, 8 waiters, and a host at the front of the house. Is 3 employees buating their asses for often times during dinner, at least 50-60 people. A little monetary compensation is always nice. Im the kind of guy where a nice compliment or two is more than enough for me.

Most people who dont tip have never worked customer service before. They only see the waiter and food. They have no idea the real deal of whats happening when its busy. Just remember, when its busy, you are not the only table in house.

I used to work at a fast food place with a maximum occupancy of around 1100. Often ran out of seating most days too.

The restaurant industry in America is borderline criminal. The tipped minimum wage hasn't been raised since the 90s, and many restaurants "tax" their employees that they already don't actually pay to pay other employees who are on salary.

For example, at the place I work I "tip out" roughly 10% of my total tips to the restaurant. They then use that money to form a pool to pay the food runners (person who isn't a waiter who just brings the food), host (typically a younger girl at the front who seats you), and the bartenders for making the drinks. Pretty sure we also pay the busser, when we have one. I agree with tipping out the bartender, as they are also on the 2.14 an hour they never see, but the hosts and the rest of them? fuck that. It sucks working for a company too chicken shit to pay you, let alone your support staff. The upside is I have no other skills besides being nice and fast, and I'm making upwards of 20 dollars an hour working part time while going to school.
