How do you make good over easy eggs? Every time I try the "splash water and cover" method, it just becomes sunny side up eggs with over cooked yolks, and everytime I try to flip the eggs, I struggle so hard to get beneath the yolk and half the time either break it, or take too much time trying to get under it without breaking it, that in either case results in an overcooked egg

Keep the heat low, scoop up the uncooked whites that trail off the side over the yolk when you pour the egg in, baste

I'd argue in favor of slow cooking. Eggs don't sear and release like a cut of meat.

Veg oil / butter in a nonstick pan, take it on and off the heat until the whites begin to slightly set around the edges. Then you are just going to have to flip it OP, practice makes perfect. You're going to break a bunch of yolks before you get good at it.

Slow works better for me. I set the heat to 4, cook the bacon, then towards the end I crack two eggs on the side of the pan with least oil. It works out pretty well.

Agree with the anons saying low heat is key. If the heat is too high the whites will cook while the yolk is still liquid. It'll break every time unless it's somewhat set when you go to flip.

I literally just made a couple sunny side up eggs 15 minutes ago. I use medium heat and lots of butter in the pan to ensure the egg doesn't stick. Wait until the the sides turn a bit white and carefully poke around the edges of the egg to make sure they aren't sticking to the pan. Then if you can't get completely under the egg sorta slide it over itself until its upsidown. This method has never let me down.
