Store bought jerky lasts about a year or two so long as it's in an airtight container or unopened bag

home made jerky only lasts about 3 months, longer if you freeze it.

Honestly it depends on what kind of SHTF you're talking about, if you're just prepping for a limited time SHTF scenario(rioting, natural disaster, basically some event that will end and have normal services restored) you only need to think a few months in advance, you can probably live off stored items that long without any issue

if you're thinking long term SHTF like collapse of civilization kind of scenarios you have to be looking at long term sustainability more so than stored goods which no matter how well you prep will eventually run out or spoil, and should focus on things like livestock and growing food
