Do you like to use stock, wine, vinegar? Share your deglazing tips snd tricks here.

Depends on the dish, really. But I prefer to use something alcoholic. Wine, brandy, or bourbon are my go-tos. I think the alcohol (which has a lower boiling point & specific heat than water does) is more effective for getting the fond off the pan.

I absoloutely love good homemade stock, but I usually deglaze with booze, then add the stock and reduce.
