There's quite little actual grease in them. The batter doesn't absorb the oil you cook them in. You just get the fried and greasy outside, but it's very lean on the inside.

Anyone else find Yorkshire puddings hard to make?
I find often that the tin gets too cool by the time I pour in the batter, and half the puds don't rise properly. Other times it's too hot, and they burn on the bottom. I guess I've got to keep an eye on hot spots in my oven, but I'm never quite satisfied with how my puds go.
