What's with the placebo hipster >MUH SEASONAL INGREDIENTS thing that I've been seeing everywhere?

It's like hipsters think weird, bitter, impossible to chew vegetables magically get more tasty based on the weather outside

The worst of it is you get these "fancy" restaurants sticking like 3 ingredients on a plate and they're pretty much barely even cleaned vegetables and maybe fucking salt (himalayan obviously). Because bland = cool, I guess?

At least it's better than the "diversity meme" of rotten fish heads soaked in overwhelming spices and if you don't like it you're literally hitler

there is a small restaurant/cafe here that has a weekly menu based on local ingredient availability. it's a pretty cool place desu. not hipster shit at all

dude, you obviously know nothing about what goes into pricing food. the actual product isn't much more expensive to source but generally at a restaurant that gives a fuck about sourcing good product they will also make everything from scratch. so now you're factoring in added labor costs and higher food cost because you're not selling pre-made, mass produced food that's cheap to buy in bulk and has a much longer shelf life (preservatives) than product you make in-house.

this means smaller batches made more frequently equating to more labor and more product to keep up with what you're selling.

if you don't care about any of these things then pizza hut will gladly sell you a bigass pie for ~10 because they're a conglomerate and it's what they do.

you're failing to take into consideration overhead/taxes (payroll tax mainly)/replacing shit that breaks/buying new plates and tools/etc. all of which go into the price of the food, and if you are a mom and pop non corporate place you're going to have to charge a little more.

meat is fucking expensive. dairy is expensive.. who the fuck is eating plates of vegetables for $15? i mean yeah, vegans, but those are vegan restaurants and it's implied that they're retards with disposable income.
