I hate how he always treats the waitstaff like hapless victims of the restaurant despite also being complicit in selling spoiled food. grilled romaine is legitimately delicious if you do it right

>split heads of romaine
>generous oil salt and pepper
>grill cut side down on lowish heat long enough to get grill marks and soften the lettuce up a bit but not long enough to completely char it
>off the grill
>cut the butts off, chop up like a normal salad
>serve with some kind of acidic dressing (basic ceasar dressing with lemon juice is good)

the grilled romaine takes on a slightly nutty flavor, it's really good. the guy in the video had the right idea but he fucked up when he just threw the whole head of romaine on the plate without chopping it up or removing the butt.
