It's common to add a bit of sugar to the yeast while it blooms for a few reasons: it helps you tell if your yeast are actually alive and avoid wasting ingredients on under risen bread. Assuming your yeast wake up the sugar also feeds the yeast and gives them a little jump start for feeding on the starches in the flour. It can also ever so slightly help with browning.
