i've never found it to make any difference in cooking time but i usually do anyway just in case it actually does cause less intestinal gas. i live alone so that doesn't really matter either i guess

Soak them pressure cook especially if I'm making red red or chili

Nay.

Not really, what it does is help ensure that the beans actually cook through. Raw beans are of varying degrees toxic because of phytohemagglutinin.

>> No.10801797

>>10801326
I make beans often, I do the quicksoak method. soaking overnight doesn't make them better, it just makes the skins looser

>> No.10801806

If you're a lazy fucker like me you soak them overnight.

Even if you don't soak your beans, you should still be washing them thoroughly

I never had a chickpea in my mouth. Am I missing out?

How else would you do it? Just start boiling them? Waste of fuel.

>> No.10802504

>>10801785
boiling beans for 15 minutes destroys basically all the phytohemagglutinin, or at least there isn't enough left to worry about.

Every fucking time someone makes a thread about beans, I have to roll this shit out.

http://www.latimes.com/food/dailydish/la-dd-dont-soak-dried-beans-20140911-story.html

"But cooking unsoaked beans is not new. No less an authority than noted Mexican cookbook writer Diana Kennedy has advocated it for years. "If you want the best-flavored beans, don't soak them overnight, but start cooking in hot water," she says in "The Cuisines of Mexico" (Harper & Row: 1972)."

http://www.seriouseats.com/2014/09/soaking-black-beans-faq.html

"So what's the conclusion? Well it seems obvious:don't bother soaking your black beans. Un-soaked beans taste better, cook almost as quickly, have great texture, and don't cause significantly worse problems for the digestive system."

http://ruhlman.com/2011/03/how-to-cook-dried-beans/

"One thing that is demonstrably true is that you don’thaveto soak your beans overnight; if you want beans for dinner, put them in water and cook them till they’re tender or at least edible, no soaking, no blanching, just put them in a pot and cook them."

>> No.10802959

A freshly cooked chickpea that's not too soft and not too hard is amazing.

>> No.10802963

>>10801326
I can never seem to find fresh enough dried beans to forego soaking.

I always soak just to weed out the ones that don't begin to absorb water and would remain hard even after hours of cooking.

>> No.10803589

>>10801758
Maybe most of the retarded cooks here, but anyone with a slight knowledge of cooking knows that soaking them helps reduce the cooking time, increases digestibility and cook more evenly, same with chickpeas.

But then, people in this country seem to refuse to acknowledge this and prefer to wait 3 hours for fucking chickpeas to cook

So what are you supposed to actually do with beans? Seems like such a pain in the ass to make them as a side dish.

>> No.10807120

>>10807098
soak in water overnight
discard rinse water, put in a pot. Add water if you're a pleb, stock if you aren't. Simmer until tender. That's the basics. It will be greatly improved by adding some aromatic veggies like mirepoix, as well as a ham bone or other smoked/cured pork product like a ham hock, chunk of bacon or ham, etc.

It's super easy and even though it takes a while, it's all hands-off. Also very inexpensive, filling, and healthy.

Yep, that's the nice thing. You can do other things while the beans are simmering away.

Or you can use a pressure cooker and get it done in 1/3 the time.
