I made it for me and had plans to make something for him when he woke up, which was supposed to be hours later. He just happened to wake up right as I took the pic and so I offered it to him. I was joking about the stealing it part. Lol. I don't eat large portions anyway so an entire plate isn't necessary for me. I do make enough for our meals, plus leftovers every time I cook (minus this one time since I only had one thigh thawed already). I usually just have a few bites here and there of whatever is in the fridge already, and he eats the bulk of everything I make.

I hope I explained it well enough to have cleared things up. And like I said, I'm totally new to cooking and serving, so I'm still learning appropriate portion sizes and stuff like that. I'm like below basic newb level. I'll get better with practice and help from /ck/, if I'm lucky.

I had a Cuban craze last year and that mojo recipe was the best. I smoked the pork shoulder though, instead of using an oven.

For the garlic fingers, follow the recipe on Serious Eats foolproof pan pizza page for the dough and increase dough ingredients by about 10-15% for two portions that fit a 12-inch pan. I feel like it makes a huge difference compared to other doughs I have tried and only takes a few minutes to throw together.

The pork that went into that. If you decide to make it again OP, the Cuban recipe from Binging with Babish is extremely good. The marinade is awesome, uses 4 cups of orange juice and spiced rum. The flavors really stand out compared to the Serious Eats and Chef John versions I tried. They are all delicious though.

They were tiny skrimps I had in the freezer since who knows when. I chopped a couple chipotle peppers up, couple cloves of garlic, tossed it in the pan with some heavy cream and it was good after a couple minutes. It doesn't look great, I'll give you that.

Fried at fairly low temp for, I dunno, ten minutes maybe? Use plenty of fat in the pan; they won't absorb a lot of it anyway.
