don't you have cucs and dill in your garden? don't you save your jars? it's a couple gallons of vinegar and some pickling salt you mongoloid.

those are all the cheapest on amazon barring like quarter oz tins for 4x the price per oz

the cucumbers and dill are not the expensive part, all the extra shit you need to add to make a truly good pickle is.

you might as well be buying great value brand pickles

what in the everliving fuck are you adding to pickles to make them expensive? there's a market i go to that has whole dill (flowered and everything) for like $2 and it's a 3 foot tall plant. maybe if you're buying little jars of peppercorns and allspice from whole foods like a stupid fuck, that's maybe where things are getting expensive.

>> No.10925419

Wouldn't it be cheaper to go to a local store that sells these ingredients in bins and by weight. There is a store in my city that does that and they only allow the employees to access the bins.

Bullshit. I live in a shitty ass military town and can get mustard seeds in walmart and rosebuds at the asian supermarket. You don't have anything like a gucci supermarket in your backwoods town if you can even get mustard seeds.

Just buy "pickling spices" on amazon. It's all that shit except pre-mixed so you don't have to make enough pickles to feed your bastard catholic family for a year to break even.

This. Mustard seed is a basic fucking item to have. If you have no stores in your town that stock it, you've got bigger problems than wanting fresh pickles. Like, not getting raped by swamp mutants.

why are you buying pollen lol. just find a mix of pickling spices. most of the things like this have a higher initial investment cost but get much cheaper in the long run anyway. and you don't NEED that stuff for pickles, you can make them just with cucumbers and salt.

The basis for pickling is water, sugar, salt, and vinegar; those are all very cheap
Depending on how you want to flavour your pickles, you might want to add (I include what I pay from the pakis down the road)
Fennel seed - 300g for £1.50
Coriander seed - 500g for £2
Yellow/black mustard seed - 300g for £1.80

I reckon I use 50g of mixed seeds for a litre of pickle liquor
Used right, that'll make enough for an entire fridge of bloody pickled stuff
Don't be silly

I want to get into pickling, but I've never had any luck sealing the jars with the water bath process. Can I just stick a lid on them and put them in the fridge?

>Can I just stick a lid on them and put them in the fridge?
Yes.
The pickles come out better too. Because they were never cooked the texture is more crisp.

Distilled white vinegar, 1qt, $1
Malt vinegar, 16floz, $1
Dill seeds, 2 x 2oz, $6
Mustard seeds, 2 x 2oz, $6
Peppercorns, 2oz,$1
Garlic, 1 head, 50¢
Kosher salt, 3,5oz (sold in 8oz container costing $1)
Pickling cucumbers, ten offers of three-for-a-dollar, $10

total cost for eight, 32oz jars of homemade pickles: $26.50
Total cost for eight, 32oz jars of storebought pickles: $27.92-$35.92

In conclusion: that's too much effort for a dollar-something in savings.
Solution: add a little extra vinegar and salt to the brine leftover from storebought pickles and use that to make bootleg pickles. Jar 1 will cost $3.49, but the bootleg jar will cost only $1.50 more, give or take, a savings of about $1.81 over a jar of conventionally homemade pickles.

I chose sizes of each ingredient to create minimal overage. I mean making 8 jars of pickles will use up all the ingredients listed except the salt. I've never seen kosher salt in any size smaller than 8oz.
If I'm buying in bulk, the cost will be substantially reduced.
Pickles are a clear example of buy-the-butter (IE, it's cheaper to buy butter than it is to make your own or that the savings are overshadowed by the amount of effort).

I do, however, make my own granola. My homemade granolas are higher quality, container far more fruits and nuts than storebought, and cost slightly less than even the cheapest ones sold at the supermarket. THAT is something people should make themselves. Also yoghurt. 4qts of yoghurt will cost me $10 at the cheapest while making 4qts myself will only set me back about $5.50.

Just got back from the store to buy pickle seasonings. Only managed to find corriander seed, fennel seed and dill seed. No mustard seeds to be seen in my town. Also, no fresh dill. I have to go one town over to even find fresh dill.

>I chose sizes of each ingredient to create minimal overage
Probably why they're so expensive.
I'd imagine that anyone who cooks somewhat seriously already has vinegar, peppercorns, garlic, and salt on hand. And there's a good chance they have at least some of the spices on hand too. I have mustard seed, for example, because it goes in a lot of curries. I don't have any dill seed on hand, but I have the plant in my garden.

IMHO pickles are great to make because they're incredibly easy (the effort is virtually zero). And cost-wise they do pretty good too. When you compare them to premium branded pickles the cost savings are great. Not to mention you get full control over the taste so you can make 'em the way you like 'em.

If anyone wants to take the lazy route you can buy pre-made "pickling spice". I've bought the one from Spice House before and it's god tier.

I'd be skeptical of that brand as their stuff is usually old flavorless garbage, but yeah, that's the idea. It can save you money compared to buying a jar of each of a bunch of spices.

That said, you might not need any depending on what kind of pickles you make. I flavor some of mine with nothing but salt, fresh garlic, and fresh dill.

I hear ya. I've got all those ingredients on hand myself (and then some), but I often get scolded by /ck/ for saying 'X is cheap to make from scratch' because a lot of people here don't seem to keep something as common as a 3lb sack of onions or a bottle of wine for cooking (I use Carlo Rossi) around.

I tried one premade pickling spice and it was awful. Tasted like what old ladies houses smelled like in the 90s (IE potpourri and regret). Never again.
