Pain processing is much different than pain sensation, especially in such a less developed nervous system, and in humans and greater animals there is an emtional component to pain perception that insects and lower animals lack. You're right in thinking that an animal that couldn't feel pain would die out as a species almost immediately, but pain perception is much more nuanced.

Veganism is not perfect, and the sustaining of one life necessitates - to some degree - the taking of other living beings. Veganism is a way to minimize this damage.
Eating a pound of beef requires ten times the farmland required for producing a pound of vegetables. Therefore when eating meat, you have the killing of both the animal itself and all the rabbits, mice and birds that get killed in the production of the food for the livestock.
As a vegan you are only responsible for the animals killed during production of the vegetables. The production area is a tenth of that required for meat, therefore a vegan will probably be responsible for a tenth of the deaths.

Going vegan minimizes the pain and suffering necessary for sustaining life. It's not perfect, but it's better than eating a carnivore diet.
