speaking of loving the earth, how are you guys getting around the problem of out-of-season veggies and such? Yeah, you can go to a supermarket any time of year and buy fruit and veg but if you think about it, it's highly unnatural for that food to be there. It's only possible because it's been grown on the other side of the world and shipped in with a big fleet of smoke belching trucks, airplanes, and ships. That's hardly eco-friendly.

I'm not a vegan but I had a coworker who was, and he invited me to his house for cinco-de-mayo for his self proclaimed "bastardized versions of traditional dishes". That type of food generally lends itself well to veganism. Corn & bean salad, jalapanos with peanut butter, guacamole. He even made some pretty impressive vegan quesadillas with mushrooms and some type of cheese substitute. I thought they were pretty good.

I tried for a while to make good bean burgers but the problem is that they're too starchy compared to meat. Most veggie burgers are made from "textured vegetable protein" which is closer to meat than mushrooms or beans. You can also use seitan/vital wheat gluten to make something closer to meat too. Bean and mushrooms burgers are tasty, but they usually leave you feeling unsatisfied since they're lower in protein, calories, and fat. Your best bet is trying to make a burger from TVP/seitan if you really want to get into it, otherwise you can't really replace the storebought ones.

Depends on what you're asking about, really. Fruits don't keep very well at all, maybe only a few days depending on how fresh they were when you bought them at the market. Vegetables that grow underground like onions, potatoes, roots (carrots, parsnips, turnips, radishes, etc.) keep for a long time in a cool dark place. They can keep for months, and might well be months old already when you bought them.

There's a reason why people started making preserves like jam. They keep for many months if not years if properly made and stored. Fruits can also be dried or made into "fruit leather" (basically jerky, but for fruit). Any fruit or veggie can be canned. For acidic ones all you need is a big pot of boiling water and canning jars. For ones that aren't acidic you need a pressure canner. Canned foods last for years.

There is also fermentation, like kimchi or sauerkraut. That lasts for months at least.

Am not strictly vegan but eat mainly plant-based food. One of my favorite meals is chili sin carne with rice. Comfy, filling and beans + rice = high quality protein.

>chop onion, garlic, chilipeppers, veggies to your liking (I usually add celery and carrots)
>sautée onions and garlic
>sautée other veg
>add chili's and a ton of ground cumin (or Sambal Oelek, works even better IMO)
>add tomato concentrate, let it sautée for a while
>add diced tomatoes, fresh or canned, and crush them up a bit in the pot. Also add a couple of tbsp's of ketchup, gives it a slightly sweet aftertaste
>Add kidney beans
>add some stock (or water + boullion cubes). Not too much or you'll end up with soup.
>Let simmer on low heat for 20 minutes. Stir occasionaly. Taste and add more salt/cumin/tabasco if needed.

Serve with whole rice. Add some chopped cilantro if you're a fan. I know this is a vegan thread, but this dish is even better with some sour cream on the plate.

Eat out of a bowl with a spoon, comfy as fuck.

If you look at more modern surveys they suggest there isn't much gain beyond .7g/lb. But it's really pretty simple, just eat foods high in protein.

TVP is 48g protein per 320 cals.
Tempeh has 31g protein per 320 cals.
Seitan has 75g per 370 cals.
Black beans have 20g of protein per 310 cals.
Red lentils have 18g protein per 230 cals.
Peanut butter is 8g protein per 188 cals.

You can find TVP in your local grain aisle with the rice/oats/etc, I like Bob's Red Mill. A simple taco recipe is add a 1 cup of boiling water to .5 cups TVP, add in spices you would for tacos, some sliced onions/radishes/cilantro/veggies, maybe beans or refried beans, and salsa.

Add some protein powder, factor in the protein you get from grains like brown rice/oats, and you're good.

It's important to remember not all proteins are equal, and generally plant-based protein powders are less bioavailable than whey powders, so you may want to aim a little higher.

As other anon said, don't worry about labels and do what you can that is practical and practicable. Most asian cuisines don't have that much gluten (rice, rice noodles). Nuts aren't a huge deal, they're good for fats and protein, but fats you can get from avocados, chia seeds, coconut milk, or olive oil. For protein just up your sources from other foods. I don't eat many nuts at all.
