The fat from the butter helps the melt the sugar into a sauce, rather than letting the dry sugar burn sitting on top of the meat, the butter melts and drags it down into the pan to make a sauce. Was the total amount of butter necessary? No, definitely not.

I didn't say anything about styles of sauces, naturally there are many, but burnt ends are nearly always done up in a sticky sugary sauce as he has done. They're traditional to KC BBQ which is known for having sweet sauce.
Furthermore, I implore you to tell me what a burnt end might be if it's not the fatty edges of bark from a brisket.

I was with him on the recipe up until he added all that butter. Unnecessary. Could have used a beer or a flavorful juice to moisten the meat (especially because he didn't even use the butter concoction after letting the meat cook in it). Too much barbecue sauce for my taste too. I get he was going for a glaze consistency, but he could have used less liquid and a higher temperature to reduce the sauce.

I'd certainly eat some, but the recipe seemed wasteful. I guarantee he spent more money on the butter braise and sauce than he did on the actual piece of pork belly.
