So, 1 kg of my favourite cheddar cheese was in a lost suitcase for a week at tropical temperatures. It melted and all the oil/fat seems to have leaked out and separated.
Is there any way I can recover this? Perhaps melt it again over a low heat and mix it back together?
It tastes bad without the fat

Get a few tablespoons of sodium bicarbonate, stir in lemon juice gradually until it stops making it fizz, grate the cheese into it, whisk over a low heat until it blends together, spread on a sheet and leave to set.
