baked chicken, marinated in soy sauce, oregano, bay leaves, garlic, olive oil, paprika, salt and pepper

rice and beans for a side and habanero sauce for a dressing. super comfy food and i feel accomplished after making it.

Pork and beans is always solid
Any porcine deliciousness (fattier the better) - fry it in pieces. Add some onions if you like. When nicely browned add the soaked beans and cover with fresh water, then simmer till the beans are nice and soft, and the pork tender and starting to fall apart
eat as it is or on rice/potatoes/insert carb here
Good things to add as you wish - garlic, thyme, leeks, carrots

Eggs with pesto or hot sauce on toast (5 min)
Microwaved bag of broccoli with butter (5min)
Microwaved vegan meatballs/regular meatballs (8min)
Microwave rice or in rice cooker (2-20min)
Apples, Bananas, Nuts, Seeds (0min)
Oatmeal with frozen berries (5-10min)

All are easy and quick with little cleanup. It's what I eat anyway

Soup/stew, chili, Cuban beans, sometimes oxtails or braised short ribs if I have them in my freezer and some red wine/demi/beef stock to use up.
Usually anything low, slow, and hearty that takes a few hours. I can mindlessly cut up the veggies or mirepoix and then get it rolling and check on it every so often between naps or hot showers and at the end I make enough that I can eat until I'm stuffed and feel norished and contented.

Just throw some veges and some chicken in a slow cooker with whatever herbs you have lying around. I find it helps if my house smells good.
