A local Cajun place does the concept a lot better with herbs and spices in the batter, a variety of fish to choose fried up, a large assortment of dipping sauces and fry seasoning as well as sweet potato fries. The concept isn't bad but traditional fish n chips lacks flavor.

Then you're probably not had proper fish and chips. If the fish is high quality cod then you don't need much seasoning, and proper fish and chips the batter is lightly seasoned and so are the fries. the 'flavor' from fish and chips is also based mostly on what sauce you use on the fish, you don't eat it plain. Obviously most people use tarter sauce, but several aoli variations exist that are magnificent with fish and chips. If done correctly you'll be hard pressed to compare it to anything, I'm not saying it's the best thing ever but it's really good and COMFY eating. if you think long john silvers or some local pub place is fish and chips ur sadly mistaken and have never had them.

I was really excited for OG fish and chips when I went to the UK and was somewhat let down by it, Australia has way more options at the fish shop like fried dim sims, potato cake/scallop, calamari rings, dutch croquettes and crab sticks.
I think I found it a bit strange because the fish used was different to what we have back home, Australia mostly has flake, blue grenadier and whiting, that sort of stuff instead of cod, hoki or snapper like in the UK.
