This was exactly the reason I did it. Had some ground turkey that was about to go and some sweet peppers that were going soft. Made a heavily seasoned meat slop out of it all with some other veggies and chickpeas and served it over white cheddar potatoes. Came out looking kinda like a saucy picadillo but it tasted incredible.
