For me it's cold steel cut overnight oats, but I like to prep it at least 36 hours in advance so they hit peak plumpness. It's like a muesli cereal, with as much variety as you can dream up. I did a white chocolate and raspberry one a while ago that was fantastic, but my favorite is pumpkin butter and walnuts

At your age / height the process of adding muscle is going to be slow because of your metabolism. Focus on a 1.5 to 2 pound gain in muscle PER MONTH, and concentrate on building that muscle in your legs and back doing compound exercises with resistance.

As for diet, think:
protein = muscle
carbs = fuel
veg / fruit = vitamins, minerals, fiber
fats = maintenance and emergency fuel

Try doing at least 20-25 g of protein 5-6 times a day. As for breakfast, don't worry about it, as long as it's protein, it doesn't matter when you eat it.

Look at eggs, canned fish like tuna / sardines / smoked mackerel, and of course the standard beef / pork / chicken products. Other sources that are decent are cottage cheese, yogurt, cheeses, etc.

Squats, leg presses / curls, bench press and pull ups are your friend, lanklet, just keep at it and by the time you're 22 - 23 you can be fit as you want to be.

as for slow digesting. you actually want food to be quickly digested so that you start to feel full while you are eating, so you don't over eat. hot oatmeal is rapidly digested by the body.
