Honestly nothing. XO is XO. Cognac is all made at the same place with the same grapes. Anything above is just some marketing limited edition bullshit that only inflates the price.
You should get into setting your own preference
I've had bottles of Courvoisier, Henessy and Remy Martin and I honestly prefer the former.

What are your favorite liqueurs?
Is there a good substitute for Chambord that doesn't cost as much? I bought pic related but it's a bit saccharine.
I'd be willing to spend more than the $15 the di Amore costs, but Chambord is $35-40 and I don't like that.
