Depends on the region. I only know north and central.

In the north it's mostly baozi and they have a pancake called jian bing which is a huge pancake folded up with sauce and egg inside. The pancake is the best thing.

In central China it's more varied. You can get baozi, fried baozi, wontons, but the main thing is noodles. You can get noodles in soup, or dry noodles. The dry noodle dishes are really nice; much better than the soup ones. They boil the noodles in large vats of water, drain them, then mix them up with a variety of sauces, powders, chopped pickles, coriander, spring onions, etc., varying from place to place.

Fried dough (the Chinese translation is "oil/fried strips")
Congee (hot watery rice)
Tofu bean curd
Some kind of baozi (meat/vegetables wrapped in a bun, there are several kinds)

If you Google everything on my list you'll likely find recipes. Unless you live in New York or San Francisco (two larger cities with a lot of chinks) you'll probably not be able to have restaurant quality Chinese breakfast anytime soon, so I encourage you to try and make it yourself. If you've convinced yourself you want the real thing, my only suggestion is don't go to China, that place is a fucking shit hole. Go to Taiwan, Singapore or Hong Kong.

Congee is pretty bad though. There are some ok ones like pumpkin congee, pidan shourou zhou, and babaozhou, but even the best ones are basically only just about passable. It's like eating cereal with water instead of milk. But Chinese seem to consider it healthy and a comfort food, something easy on the stomach if you're not feeling 100%.

Here's a good one: doupi.

They make a mixture of yellow bean paste and water, fry it in a huge wok, add eggs then turn it over. When turned over they add sticky rice and a mixture of stewed meat, mushrooms and tofu, then they flip the whole thing over again bit by bit. It's pretty good and takes some skills. Never saw it in the north though.

Where I live (north china) they definitely do.
For the Chinese in sucky jobs, say taxi drivers or construction, they have what we call a 'hard breakfast' which is usually a bowl of yumi zhou (watery corn grit porridge), a youtiao (fried dough) and cup of doujiang (sweetened soy milk).
It's cheap as fuck and there are chain restaurants around the city selling it from very, very early to very late. Probably costs about $1 which even beggars can afford.

Congee's nice if you're feeling rough. Just cook rice in a shitload of water, adding more if it gets low, until it turns to porridge. Add little areas of strongly flavoured things like chilli, sesame oil, spring onions, anything salted or preserved. I like to keep things separate so you can change up each mouthful.

Dim sum is the best though, nothing better than going down to a stall and getting a bagful on the weekend.

Fuck I forgot about the mianwo... I went back in July and Hankou was getting gentrified to shit. There was a whole section of eateries cashing in on their names, but slowly turning into just tourist traps. Went to Cai Lin Ji expecting good things based on what I heard, but their reganmian was underwhelming. I'd rather just stay on the Wuchang side and hit up some stalls around the universities.
