Ask people to bring sides and you just make a couple of turkeys. Especially if anyone attending has stupid food restrictions like vegan or gluten free, just tell them to bring their own stuff.
Just make sure that you have a general idea of what everyone is bringing so you don't end up with 10 pies people bought from the grocery store on their way over.

Going to need a couple of turkeys. I'd store buy as much as possible, but at the very least make the stuffing and the mashed potatoes from scratch. I have 8 people to cook for this year, in the past it's only been 3. I'm making the stuffing, potatoes, gravy, and cranberry sauce, but the rolls and pies are going to be from the store. If people want shit like green bean casserole they can bring it themselves. Don't forget the drinks. If you have travelers spending the night, don't forget breakfast stuff or things like bread for turkey sandwiches.

Start a few days ahead. Pies, cranberry sauce, and appetizers can be made or prepped a couple days before. Get a roaster oven for the turkeys to free up your oven.

Did you buy a fresh or frozen turkey? If it's frozen, do you have it thawing in the refrigerator yet? It takes them almost a week to thaw. You can help it along by putting it in a bucket of cold water outside of the fridge if you need it to thaw quicker. In my experience, brining a turkey gives it a much better flavor and helps it not to dry out. Brining and cooking it in a turkey bag pretty much guarantees that you will have a juicy turkey. You don't have to worry about overcooking it at all. A meat thermometer is a great help so you don't have to guess if it's done.

Slow roast one of the turkeys or both if you're comfortable with it. Start it the night before, an hour at 450 and then turn it to 175 and literally forget about it until it's time to serve. Idiot proof.
