Breakfast sausage (1ea Jimmy Dean hot and Sage)
2 cups uncooked rice
Family size can cream of tomato soup
American cheese

Brown sausage, cook rice, mix with undiluted soup. Spread in a 9x13 pyrex. Cover tip with cheese. Bake at 350 until cheese starts browning.

You can upgrade the soup, you can make your own sausage or whatever, you can use something better than uncle Ben's for the rice. (I like Rice Select's Royal Blend) But the cheese isn't negotiable, it just doesn't work without the particular properties of American Cheese.

Never made or had frito pie but I did grow up in the midwest so I'll take a crack at it

>refried beans
>pre-shredded cheddar
>chunky mild salsa
>fritos
>sour cream after baking if desired
What I would assume is the right idea is that you layer the beef on the bottom, beans on top, then fritos, salsa gets dotted around, then the classic pre-shredded cheddar. I'd bake it til the cheese gets bubbly then serve with extra salsa, tortillas, and sour cream. Dunno if the beef on the bottom is the ideal or if it should be beans, but I think the beans would burn easily. You could also use one of those store bought pie crusts and then use beans as the bottom layer if you want a more "sliceable" pie
