You whisk an egg in a cup with a bit of melted butter then you crack an egg into it, pour it out into the pan, the unwhisked egg tends to come out first so you start in the middle and pour the pseudo omelette around it. You could can add onions/chillies/garlic/parsley before you crack the egg for a more interesting base. Kids just want chillies and tomato and cheese on top though.

if your kids want tomato you should make them rice with sauce, and it's easy too
just stir fry the rice in 1 or 2 tsp of oil for 5/10 mins and have water boil and salt it then pour it in the rice and put a lid on it, leave on very low for 30mins, turn off, leave to cool for ~10min, take the lid off and pour some tomato sauce, pepper goes well too
if you can prepare onions for flavour you can that too and other stuff like peppers carrots whatever

Add the egg last minute. Also I've only tried with room temp eggs. May be an issue.
