I use to work Grocery. It's mostly speed and carelessness. The vendors come in from the major brands and they want to get the chips on the shelf and get on to the next store so they finish up on time for the day. Stockers dealing with store brand chips just want to get the stuff on the shelf as quickly as they can so they can finish the isles and not get bitched at. This leads to them just grabbing bags and stuffing them on the shelves, sometimes even grabbing several bags at once and cramming them into the spot to make it go quicker. As long as the product is on the shelf, in the correct spot, and faced properly they could give a shit if it gets a bit squished, you will buy it anyway if you want chips.

I think that the highway robbery that 8oz of fucking fried POTATOES costs $3 to $5 depending on store and day of the week.

For $3-$5 you can get 5lbs of potatoes that can make 1.25lbs of chips. That's 2.5x potatoes chips by weight than what you can buy. You can get more if you buy in bulk. 50lbs of potatoes makes 12.5lbs of chips. Using a mandoline slicer/cone vegetable slicer, a big pot, a metal basket, a candy thermometer, salt/seasoning, and cooking oil you can make potato chips all day long if you want. In a single Saturday, in about 4-5 hours, you can turn 100lbs of potatoes into 25lbs of potato chips. That's fifty 8oz bags of potato chips. You can keep them fresh in wide-mouth, half-gallon 64oz jars then vacuum sealing them with a wide-mouth jar attachment for a foodsaver vacuum.

Up front costs for equipment, may seem costly, especially if you are going to create a ton of potato chips and want to keep them fresh in vacuum sealed jars. All the equipment can last a life time. Only oil, seasoning, and potatoes need to be continually bought. You also have the option of baking them instead of frying them. The equipment cost will pay for itself after about 300lbs of potatoes processed into chips. The biggest downside to this is the increased amount of potato chip eating, if you do increase it. The savings in the long run is about half the price of store bought potato chips. Some of you may already have all the equipment needed to make small batches that don't need vacuum sealing for longer term storage.

I grow my own potatoes, in order to control my own food intake. After working in the food industry for years, I no longer trust anything from stores anymore. I became a farmer as a result.
