can we talk about how people working in michelin star kitchens constantly LIE about their work times? they literally always say it's 18h/day non stop while in reality it's 10 hours max and those 18 hours are just for some shit special events that come once every 6 months or so. i'm fucking sick tired of it, why are we letting them off the hook all the time? it's literally impossible for a human being to work that much.

I did a trial at Ramsay's, and those guys do work 7am to midnight most days, and bloody hard at that.
Much the same at the Ledbury, Bibendum, and a few places in London
I work out in Bray now, and do 8am till about 11pm, five days a week. Suits me fine and I get a little break if I push enough in the morning.

As to how anyone can humanly do it; passion, delusion, cocaine, and coffee are most common motivators

I’m a corporate line cook working 50-70 hours a week its really not that bad. on the really busy weeks it can be bad but still nice compared most year-round restaurant slaves. the most I worked was 110 hours in 10 days straight.
