Tarbais if you can get them.

So far there is no consensus.
Everyone is saying different shit, and the takeaway from that is that it doesn't fucking matter.
Choose based on appearance and size. If you like really BIG beans, then get large kidney. Black beans are small, and of course, black. If you want a white bean, great northern. They pretty much all work. Make it fit your recipe. If you're the type who simmers the pot for 24 hours, then get a sturdy bean that can handle that and not dissolve into mush. A smaller bean will fully absorb the flavors a lot faster.
