Not too much oil nor salt.

Start with a bit of meat in hot oil, once you smell the aroma of meat, add chopped green onions, minced ginger, and spices.

Once you smell the aroma of onions and spices, immediately add main ingredients, and STIR fry like crazy. This is where a powerful stove and hot wok comes into being an important factor. Stove should be powerful enough to keep the wok extremely hot. So the evaporating moisture creates a naturally stickless surface. The heat also ensure ingredients flash cooks even when stirring rapidly.

Once ingredients are JUST cooked, serve immediately.


The cost or rarity of ingredients matters little. Freshness and finely process (cut into very thin and small pieces) is the key.

Hot wok and power stove is not optional. Wok should be hot enough no liquid is able to build up at bottle.

A lot of white people stir fry is actually stewing with a puddle of fucking liquid at the bottom.

Actually,

the difference between "home cooking" and restaurant food is the amount of oil.

Home cooking uses very little, maybe a big spoonful at most. Restaurants uses a lot of oil, not only they pre fry veggies, oil in the actual dish also adds flavor; and also obviously less healthy.

Home cooking is about fresh ingredients, short cook time, and light flavors.

A good rule of thumb for Chinese cooking is that you should not season the dish too much to mask even the lightest tasting ingredients in the dish. So usually a little salt is all, Chinese cooking at it's core is about the native aromas and tastes of every ingredient in the dish, spices and seasonings should never over power the ingredients.
