What's the protocol, I cooked up a turkey breast and harvested both sides for two large man hands of meat for later, do I trash this part?

once you have stock, you can add equal parts flour and oil/butter in a pan, cook it stirring until it darkens, and then add the stock

then you have gravy

ideally, mirepoix, so chopped onion, celery and carrot
plus some bay leaves

any hardy vege scraps you have are good though, brocolli stalks, parsnip etc

also break the carcass up so the water level doesn't have to be too high

you also might have saved it in the freezer until you had a chicken carcass as well

another thing i like to do, is cut the carcass up, and brown it in the pot first with a little oil, to get more flavour, but if you're going to use the stock for soup and want it clear rather than a sauce or to cook rice in or whatever, where the extra fat doesn't matter, then don't do that. It does add more flavour though. Or you can roast the carcass for a similiar effect.

I used the included gravy package, a few cups of water, flour, and drippings. It turned out good

For the broth I'm just winging it with what I have maybe it will be tasty when I'm done
