What are some less famous dishes that one should try out when visiting Italy. Cheeses, alcohol, coffee, anything goes.

As for OP's question, I was a big fan of Crudo in the coastal towns.
Also was introduced to the tradition of adding a bit of sambuca to an after dinner espresso, which really takes it to another level

what? no, octopus dishes is common where there is a rocky coastline (apulia, tuscany, sicily)
veneto coast is all sand and swamps, the only famous fish dishes from there is baccallà (stockfish) and fried sardines marinated with onions and vinegar (sardèe in saór)
pic related baccalà alla vicentina (mashed stockfish with cream served with polenta) is one of the best dishes from veneto
