They didn't farm them and instead just loaded up their ships with them and ate them while at sea. They treated the islands like take all convenience stores. They did the same with the tortoises at Galapagos, but luckily enough of those were left to continue.

and rats/vermin being introduced to the islands through said ships and sailors. The adult breeding population was eaten and the younger generation was preyed on by pests and predators they'd never had to deal with.

As to an answer to OP'S question, I'd like to try mammoth. I know some have been found and preserved in mires and bogs so well that some 16th century kings were able to treat their guests to mammoth steaks. I would imagine that the rearing and raising of them would be an issue though, they were very dependent on their habitat and environmental factors to survive.

With CRISPR we can do what was possible before but it only takes a week of work now instead of half a year or more. We cannot generate the dna of extinct animals out of thin air.
