What are some interesting African dishes that I can try and make? I Googled for a bit but I can only find Ethiopian recipes for some reason so I must be doing something wrong. Surely a region which such rich history and biodiversity has produced some very unique foods to share with the rest of the world.

I visited a few (White) South African friends and they made what they called Chicken Mozambique. He took all kinds of chicken parts marinated them overnight in coconut milk with a huge amount of crushed garlic, lime juice and some pepper. Grilled it the next dy and it was awesome

East Africa - some Indian influence, sambusas, lentils, hominy, eggplant
Somalia - bananas part of every meal

Simply because the ingredients are very much different beyond the basic meats and vegetables. Nobody imports all of the veggies and spices from Africa and white hipsters don't particularly care, so there's no demand for such imports in the first place.
Ethiopian food is an outlier, a few good restaurants in NYC got popular and it spread from there through social media, with lots of whiteoids showing how progressive they are by trying the cuisine. Most Ethiopian food places have little to do with Ethiopia itself and are staffed by Africans from across the continent.
However most of them still have 1 or 2 people actually from the region and know precisely what ingredients they need to import.
Most Ethiopian recipes you'll find are greatly transformed to fit a western taste and ingredient availability, I personally wouldn't even bother.
However I think you're also a bit too superficial, if you dig around you can find plenty of African recipes not from Ethiopia, but again without specifications for local spices, they're pretty bland.

Of course the entire structure of the meal is different, you wash your hands when you come in/out and instead of using cutlery you get sour flatbread you use to pick up different stews/meats. Excluding Horn cuisine, I'm mostly familiar with Somali, Swahili and North African cuisines. Since North Africa just means 'lolArab (+couscous),' I'll focus on East: I've said it before and I'll say it again: just look up 'x wa nazi' where x is whatever food you want. Examples include yam wa nazi, chicken wa nazi, peas wa nazi etc etc etc.
You'll pull up recipes for x in coconut gravy. This one is similar to coconut curry gravies from SEA less the spices. The only spice used in this sort of gravy would be good quality turmeric (unless you count garlic and chillies as spices). There's no long list of Indian powders or obscure Thai aromatics. It's just simple and good.
Avoid recipes using a lot of oil. Properly, the gravy should be made with coconut cream which breaks down while cooking, creating the familiar look and texture. However, coconut cream is relatively expensive compared to coconut milk + soybean oil, so some people do it that way.

Another dish (but I can't remember the name of it, sorry) involves boiling whole tomato, shallot, garlic and chillies together until soft then blitzing them into a sauce. Once the sauce is made, you either saute X in oil (or, in the case of aubergine, deep-fry it) then add the tomato chilli sauce and toss to cook and reduce or you slow cook X in the sauce. Season to taste, add melt in some butter and serve. Two of the most common types are aubergine-and-potato (saute type) and brisket (slow-cook type). You can make the sauce plain, as I gave it, or add spices. With spices, it's more similar to a curry and it would be called mchuzi wa x.

Another thing is the common breakfast: chickpea pancakes in orange sauce. If you've ever had North African baghrir, it's similar, just made with chickpea flour instead of semolina flour. Lots of people cheat on the sauce and use marmelade to make it.

Don't forget, though, that whatever you make, you should have two or more sides to serve with it.

One of the best restaurant experiences I had visiting some local NYC friends was eating at an ethiopian place where we sat on mats on a platform and were served a bunch of different stews and side dishes communal style with unlimited injira. I have to say, injira took some getting used to but you realize pretty quickly how the flavor and texture matched well with the different flavors of the stews.
