Not the guy you're replying to and I agree that beer can chicken is retarded, but:

Given the specific heat of water, most of the heat will be used to bring the water (beer is mostly water) to a boil. Not sure at what temperature that chicken is cooked though. The cavity if the chicken will act like a condenser bringing some water back into the can, thus lowering the temperature and restarting the reflux cycle. I don't think and it is my hope that the water inside the can will not run out throughout the cooking process, thus, the temperature will not exceed 212 F and at such temperature it is impossible for aluminum or the epoxy lining to burn (not to mention the absence of oxygen in the confined space). There IS however a very real risk of leaching of the epoxy lining into the beer, followed by some volatility which may impregnate the chicken. Risk is likely very low, although non-zero.
