I'm trying to pan sear pork chops. I let the pan heat up a bit below medium for around 10 mins. Then I'm adding a tbsp of olive oil and letting that sit for a min. After that min is up, I try to pick the pan up and swish it around a bit to get the olive oil coating the bottom. The problem is, the oil seems to all flow back to a sort of puddle on one side of my pan after I do that. What am I doing wrong?
