I'm way too technical so l like my wife will give me directions and be like "put some of this in there" and I'm like wtf, that's not an amount. She'll be like put some of this, put some of that. She'll show me but the fact of the matter is that I may slightly change the amount and it may differ every cooking experience because I have no actual measurement to go off.

And I want these directions to be precise so I can do it exactly the same way every time, but she can't do it.

Googles from online just turn out bad because I don't have the patience to run around the store buying all this stuff that I end up using once and I don't have the time every single day to cook and that's the only way I get good at things. Once I do them repetitively I learn them like second nature. I perfect it but I don't have the time for that, and truthfully to do it every day, I'm not just THAT interested in cooking.

Also I have three dogs and the biggest one is always around me and shit hovering around my feet and I really couldn't stand trying to focus on cooking and trying to avoid stepping around him every five seconds while he's watching me for food.

Yeah, it's a lot of excuses but I mean just a lot of things fall out of place for my method of learning. I can't do it.

Couple days ago there was some cringy American YouTuber complaining that 'Italians do not dictate how their diaspora should enjoy their cooking' and then proceeds to pour creme in his 'Bolognese' sauce. They just don't get they're taking a heap of shit on some countries food. I can't be bothered that your dead 3% Italian grandma used to make it like this back in time, it's not Italian cooking neither is it a 'Bolognese'. Name it your fucking own, call it American or whatever. These dishes have a place, but by naming it with a traditional name and calling it Italian you're literally replacing someone's regional kitchen.
This two split of both being proud of being American and boasting about your European heritage doesn't make any fucking sense.

Worst is that American channels/blogs/recipe websites dominate the internet, making it often hard to find actual original recipes. Which just makes it damaging in the end: it's not salty Italians raging at Americans only, it's New Yorkers spreading their own version of Italian culture and simply because of media and English as linga franca starting to replace it. Fuck off with the cream in carbonara.

You can alter recipes however you want. The reason the traditional recipes became that way is through testing and experimenting in the first place. And there are always regional varients of recipes all the time. And nobody sticks to the recipe in the land of its origin either. Home cooks are always adjusting and adopting recipes, so you could say that putting your own spin on something is just as authentic as what's in the cook book too.
If a variation of a recipe is better than the original, then it's natural for the new version to be more popular and more common. That's a good thing. It's how cooking evolves over time. The old recipes disappear as forgotten, making space for the better ones to survive.
And I'm pretty sure dutchbabys are not named to honor its Dutch origins, but because it looks like a stereotypical Dutch person.
