What are some creative sandwich ideas that wouldn't be bad when using 2 slices of banana bread?

I'm thinking of a caprese salad sandwich with fresh mozz basil tomatoes, olive oil and balsamic glaze, maybe spread some roasted garlic on the bread or garlic butter. Probably more creative components that can be subbed in to capture similar flavor profiles.

Peanut Butter and Jelly seems to be the off the head idea, but maybe fruit and honey or maybe fruit and honey and cream cheese.

A fool's gold loaf or Elvis sandwich with banana bread would be interesting. Maybe even grilled. I can see this being a hit with fat people.

Reading through this thread I had totally written off a banana bread sandwich until this post. No worse than a Krispy Kreme burger.

Easy. Bacon and peanut butter.
You could also do maple, bacon, and fried chicken.
I doubt any fresh vegetables would work, and I don't think highly of any cheese barring something like cream cheese.

I posted >>12322807 but I thought of something more creative. I was inspired thinking about grilled plantains and caribbean food.
Grilled pork chop and spicy mango/lime chutney, or a spicy pork chop and a grilled pineapple chutney.
I'm thinking about the texture of the banana bread though and thinking how soft it is. Too soft for a sandwich with a whole piece of meat.

What if you sliced the bread and pork very thinly, assembled thin sandwiches, and battered and grilled it? Serve with chutney on the side to dip.

Maple Bacon, candied if you're a fatass
Goat cheese or Brie or camembert
Confit Duck breast

Unironically some scrambled eggs and chorizo would go well.
failing that, some ground pork mixed with cinnamon, nutmeg, chopped garlic and onion and chopped parsley fried up in a pan.

Don't know about "creative" since were talking about sandwiches, but mysost is excellent with it.
