Honestly, the gelatin mold was pretty bland, despite being made with a freshly made chicken stock. The chopped asparagus was was not good as well; I only did a quick blanche for them so they are far too crunchy for my taste.

I don't have any photos but I have made head cheese as a request for an event.
just did it in long shallow tubs, flopped it out and cut into squares for crackers
they all got eaten surprisingly, a couple people even asked for the recipe having no idea what it was and then started screaming at me after I explained how many eyes were in each batch
