I think youve got the wrong enemy my dude. I went to several 100 dollar plate classic american steakhouses of having a steak , with roasted veg , mash, an old fashion, and some sort of oyster/seafood appetizer and desu it was delicious but delicious because of the quality of the food itself rather than the transformation of it.

My steak was huge and cooked nicely medium rare (i actually ordered it more on the medium side because "true steakhouse" medium rare is way more bloody than you think. It was extremely juicy and savory and definetly an experience...but theirs this Argentinean place that serves skirt steak marinated in corona and lime with chimichurri that is tender and absolutely amazing as well just for 20 bucks. The rest of the meals were very tasty but boring. In this case of boomer era steakhouse restaraunts, it can be underwhelming in that way.

However I went to a 250 dollar plate 11 ishcourse tasting menu and that was worth every penny cause not only were ingredients of high quality but they tend to be of the rare side and also "transformed" so your paying for something you'd never have or really will have (whether you like it or not)

TLDR boomer classic $$$$ steakhouses are really overrated but are worth doing once, and tasting menus are generally a more fun worth it experience.

Sounds like you guys never ate at a real nip restaurant. Most of the Japanese stuff in the west is bland sushis and frozen yakitori.
Even eating simple yakitori but at a proper yakitori place where they are cooked over charcoal improve the taste drastically. Sukiyaki in winter is god-tier, "don" is simple but that's why they're good. Karaage is a really good kind of fried chicken. And if you somehow manage to find that karaage and sukiyaki are "too bland", then ramen will make your opinion change drastically. We got a fairly famous ramen place in Paris, and the stuff is so strong they had to add a "soft broth" version for western palates.
Yeah, jp stuff may be "overrated" in that it kind of has a weird high-class image despite being sold in a lot of cheap places, even though its simplicity is its strength. It doesn't take much to put raw salmon and salmon eggs over a plate of rice, but goddamn that's such a good idea.

The real crime was importing sushi first, it gave such a wrong image of Japanese cuisine in the west. Kind of like people thinks French cuisine is all "MUH MICHELIN STAR" even though most of it is very filling family dishes.

I went to a Michelin star omakaze sushi restaurant and was nothing but disappointed. There were some great dishes in the tasting menu, but a lot of the sushi tasted like sushi I could get anywhere. The illusions of balance and precision and effort that Japanese restaurants portray only hurt their image in the end;. The best Japanese food I've ever had was in a small ramen shop.

I went to a Japanese restaurant in my city and it's pretty much the best meal I ever had. Can't remember the dishes' names this must have been 10 years ago, but it was basically a stew made with steamed pork that melted in your mouth, veggies, a serving of rice and sashimis, with a jazmin tea as "dessert". It was all of amazing quality and extremely tasty.
